Jacoulot Highland Single Malt Scotch Whisky

Jacoulot is one of our favorite producers of Marc de Bourgogne. Wanting to dive into the world of Whisky, Philippe sought to partner with a distillery that crafted a whisky that would blend well with his casks and came upon Tullibardine in the Highland area. The distillery started out as a brewery in the 15th century due to its revered water source from the Ochil Hills that takes 15 years to reach the final resting point. This pristine water, paired with the style of whisky (non-peated), seemed an ideal complement to Philippe’s vision. After many tastings, Philippe sent Marc barrels to Scotland to finish a particular blend of casks of a similar age. The whisky spends ten years maturing in a selection of Bourbon and Sherry casks, chosen by Philippe, and then spent an additional three years finishing in the Jacoulot Marc barrels. After spending a total of thirteen years maturing in cask, Jacoulot released 180 bottles, from a single barrel, was bottled in June of 2022. This is a source single malt, non-peated whisky, aged 10 years in a blend of Bourbon and Sherry barrels, finished for 3 years in Marc de Bourgogne barrels.
